Balthazar is one of the best and most expensive bakeries in the city. Rather than let the bread spoil, the bakers sold their wares on the street for two, three, or four dollars instead of eight, fifteen, or twenty-five. I bought an apple galette. Freezing cold and at least several hours old, it was still the best pastry I’ve ever eaten.
